What is Kombucha?

Kombucha is a LIVING food and should be thought of as more than just a healthy beverage.  It is a naturally fizzy, fermented tea full of probiotics and other healthy amino acids.  Probiotics help re-populate the beneficial bacteria in the gut and bring your body back into balance.  In addition, probiotics boost immunity, detox the body, help fight allergies, and improve mood.

How does it work?

A SCOBY is added to a tea and sugar mixture.  The SCOBY (symbiotic culture of bacteria & yeast) feeds on the sugar and converts the tea into kombucha.  The sugar is a necessary nutrient solution for the SCOBY and is converted into organic acids during fermentation–  very little (if any) sugar is found in the resulting kombucha.
