Jen’s Freaky Eats Week of 4/30/2012

Hello.  Time to reveal my freaky eats for the week.  It’s always a little nerve wracking to put this up.  Somehow I feel like I need to make excuses or justify certain treats that I allow myself throughout the week.  But honestly, it works for me.  If I am craving something other than my usual meal I will allow myself a healthy snack because I think my body is telling me it needs something more.  This week I am moving mulch (a lot of it) and I have been more active outside in the garden.  That means I am requiring more calories.  It makes sense that I am craving a little more than usual as I come out of hibernation. :)

My staple drink is water. I also drink a 16 oz kombucha around dinner time. Almost every morning (5 of 7) I try to drink an energy concoction of warm water, lemon juice, vanilla, honey, and coconut oil. On the weekends I will usually have decaf macchiato with raw milk as I don’t drink caffeinated coffee anymore.

Jen’s Weekly Eats: 4-30-2012

Sunday:

B:  3 eggs and bacon, small sourdough

L:  Tomato Soup

Snack:  Ice cream

D: Grilled Delmonico steak, sauteed curried coconut kale <— this recipe with garam masala added

Monday:

B3 eggs over easy, hollandaise sauce, sauerkraut

LLeftover steak, LF beans

D: Crockpot Bulalo (Filipino Beef Stew) Yes, we eat this almost every week.  It’s easy and it’s the hubs favorite. Can you say BONE BROTH? It also freezes well for leftovers.

Tuesday:

B3 eggs over easy, hollandaise sauce, sauerkraut

L:  Tomato Soup

DStuffed Cube Steaks with a little rice

Wednesday:

B3 eggs over easy, hollandaise sauce, sauerkraut

L 2 scrambled eggs with LF salsa (opened last jar from last summer – tear)

SnackIce cream – no apologies here!  I deserved it as I was hauling mulch all morning!

Thursday:

B3 eggs over easy, sauerkraut

L:   Liver pate (made it with LF mushrooms and bacon) on sourdough

*This liver pate was made slightly different that my other.  And believe it or not it was better! Bacon and LF mushrooms are heaven!

D:  Beef and Pork sausage burgers stuffed with spinach, sun-dried tomatoes and parm, ice cream

Friday:

B 3 eggs over easy in butter, kraut, sourdough

L:   Liver pate (made it with LF mushrooms and bacon) on sourdough

Saturday:

B2 Bacon and Egg cups with hollandaise sauce, sourdough

L:   Cobb salad with chicken, sesame vinaigrette, chocolate mousse (this was a treat lunch from the hubs)

DBrats with sauerkraut, kale sauteed in coconut oil and spices (first batch of kale from the garden!!)

  • I made your stuffed cube steaks last week; they were SO quick and easy. We loved them!! And that cobb salad sounds good! As soon as my lettuce is ready in the garden, I am adding that to the meal plan!!

      That is Leslie’s recipe and I agree — so easy and tasty. I usually make them every other week. They are also easy on the budget. Cube steaks tend to be less expensive than other cuts that I can buy. And that cobb salad was from a restaurant my hubs took me to for lunch at one of my favorite local/organic restaurants. I need to learn how to make their sesame dressing. It is out of this world good! I am making dinner with some garden kale tonight too. Looking forward to harvesting some early risers. :)

  • GReat job Jen! You don’t need to justify your treats. I figure if you eat 5 meals a day (35 meals a week) if you “cheat” on 3-5, that’s ok. If you think about it, 3 treats a week if you’re eating well the other 32 won’t do anyone any harm! You’re doing awesome and I admire you for putting yourself out there like this. Thanks for sharing this with the real food community at Whole Food Wednesdays.
