Hmmm… so we’re back to ME
confessing telling you about what I ate for the week, huh? I gotta tell ya… you’re going to see a lot of the same-ole-same-ole. But, hey… maybe it’ll inspire and / or amuse you anyway. Or you can at least see that eating real food is not hard. (Even if you try to convince yourself that it is… you know who you are… yes, I’m talking to you.)
Lunch: I wasn’t in the mood to cook anything by the time I got home from church, so I just made an almond butter & banana pancake sandwich and ate that with a few carrot sticks.
Dinner: A ground beef slider (seasoned with this– except I use sea salt, not table salt) w/ sliced avocado and carmelized onions, kale sauteed with onions, garlic & bacon, and some fried plantains. (I make these slightly different than Jen, I like to fry them in butterand add some cinnamon, a pinch of salt and a bit of maple syrup.)
Breakfast: 2 eggs fried in coconut oil with some sliced avocado.
Lunch: A leftover slider w/ carmelized onions with some leftover kale.
Dinner: A salad of mixed greens, beets, cucumbers and goat cheese topped with a few slices of grilled flank steak and some sweet potato fries. (Sweet potato fries just might be my favorite thing in the whole world… well, at least my favorite root vegetable!)
Breakfast: Surprise! 2 eggs fried in coconut oil with some sliced avocado & sauerkraut. (At $7 per jar, I really need to start making this myself!)
Lunch: Leftover salad w/ grilled flank steak from last night and a mug of bone broth. And I just might have eaten a square (oh, okay… 2 squares…) of dark chocolate with almond butter.
Dinner: I was going to make some Puerto Rican Beef, but I didn’t. I made some kind of mixture of ground beef and cabbage with rice (made with bone broth) and carrot fries. It was kind of like stuffed cabbage except I stirred the cabbage into the beef mixture instead of stuffing the beef mixture into the cabbage. Meh… it was okay… not great… wish I had made the PR Beef.
Breakfast: The usual. Why mess with a good thing?
Lunch: I thought about sauteeing some carrots and adding last night’s leftover ground beef-cabbage mixture & some bone broth to make soup. But I was
lazy kinda busy, so I just reheated it, drank the bone broth and ate the carrots raw.
Dinner: Slow cooker beef short ribs and green & yellow beans sauteed in coconut oil. (I’m not a huge fan of short ribs… too greasy… but they come with our half cow, so we gotta eat ‘em.)
Breakfast: Same old.
Lunch: Some of the leftover groundbeef-cabbage mixture (leftovers are such a life saver!) with some added sauteed mushrooms and topped with salsa and avocado slices (because avocados make everything better).
Snack: Banana and almond butter.
Dinner: Meatloaf, potatoes fried in beef tallow (tallow that I rendered myself, thank you very much!), and green beans sauteed in coconut oil (again).
Breakfast: My kids were really hoping to wake up to some banana custard. But I had a ton of laundry to do last night, so instead they woke up to… you guessed it… eggs. Once again, I ate 2 fried in coconut oil and topped with avocado with a side of probiotics (in the form of sauerkraut).
Lunch: Leftover meatloaf topped with avocado slices (I’m getting super predictable here, huh?) and some carrot sticks.
Breakfast: 2 eggs scrambled in coconut oil with fresh basil and topped with sliced avocado and halved cherry tomatoes. (See?? I do know how to change it up!)
Lunch: A hard boiled egg and a strawberry-banana-kale coconut milk smoothie.
Dinner: Something kind of like this super simple sausage saute (but with kale and carrots) and a handful of cherry tomatoes.
