Jen’s Eats: 4/15/2012


It’s my turn to reveal my freaky eats for last week!  Most of the meals have recipes.  The ones that don’t are either SUPER easy (bacon and eggs) or the recipes are coming soon.  I usually try to make two or three new recipes a week but I can’t possibly post all the new ones as Leslie and I both have recipes to put up and that would be over kill, right?

My staple drink is water.  I also drink a 16 oz kombucha around dinner time.  Almost every morning (5 of 7) I try to drink an energy concoction of warm water, lemon juice, vanilla, honey, and coconut oil.  On the weekends I will have decaf macchiato with raw milk as I don’t drink caffeinated coffee anymore.

Jen’s Weekly Meals: 4-15-2012

Sunday:

B:   2 eggs and bacon, coconut fruit bars

L:   Almonds, coconut cream concentrate (off the spoon), raw cheese (I picked at snacks because I was out all afternoon)

D:  Leftover Bulalo

Monday:

B:  3 eggs over easy in butter, bacon

L:  Liver pate on sourdough, Garlicky LF Beans , GF carrot cake

Snack:  1 T coconut cream concentrate

D:  Ground pork with mushrooms and kale in a brown sauce, homemade vanilla ice cream

Tuesday:

B:  3 eggs over easy in butter, bacon

L:  Chicken broth, Garlicky LF Beans , Lara bar (made mine with coconut cream concentrate instead of nut butter)

Snack:  1 T coconut cream concentrate

D: Marinated calf liver with honey glaze, coconut and garlic spinach, (hubs had rice and I did not)

Wednesday:

B: 3 eggs over easy in butter, raw cheese

Snack:  Hot Chocolate (with carob and coconut — yumminess)

L:  Liver pate on sourdough, Garlicky LF Beans,

D:  Curried Crepes (with pork- or any other meat, carrot, spinach, and mushrooms)


Thursday:

B:  3 eggs over easy in butter, raw cheese

L:   Liver pate with crepe crackers, ice cream

D:  Sausage dogs with sauerkraut, spicy cumin carrot fries, coconut fruit bar


Friday:

B:  3 eggs over easy in butter, raw cheese

L:  Liver pate, Garlicky LF Beans, yogurt with almonds

D:  Filipino Pork Menudo with rice

Saturday:

B:   3 eggs over easy in butter, raw cheese

L:   Sausage dogs with kraut, tomato basil soup

D:  Eggs and kraut again -being lazy tonight

  • Thanks for posting this Jen! My biggest struggle is figuring out a whole week’s menu and it’s fun to see what others are eating. Have you heard that coffee can trigger the same gliadin reaction in Celiacs and gluten sensitive people? I was drinking decaf but gave it up entirely now. My husband thinks this may not be true. Which one of us is right?? (I miss my Sunday morning coffee!!)

      I hadn’t heard that about coffee but it wouldn’t surprise me. It doesn’t have the health benefits that everyone keeps wanting to attribute to it – especially if we are talking nutrient dense foods. I just incorporated decaf back in after about 3-4 months since full detox. That was only because a relative bought us a fancy expresso machine as a gift. I use a decaf blend for it and only twice a week. I will look into the connection you mentioned. Do you have a reference or link I can check out?

    Spicy cumin carrot fries? *tremble* Is there a recipe for that somewhere?

      No recipe yet. That was a total experiment that scored high with the hubs I will try to get the recipe up next week.
