Leslie’s Eats: Week of 4-8-2012

So you guys wanna know what I eat on a daily basis, huh?  Well, here goes…  hope you’re not disappointed.

Note:  I drink coffee w/ heavy cream every morning and I drink kombucha  and water throughout the day… every single day.

Sunday (Easter):

B: 2 eggs over easy in coconut oil with avocado slices and sauerkraut

L / D:  steak, maple roasted brussels sprouts & sweet potatoes w/ bacon, plantains, tossed salad & almond flour brownie

Have you tried these yet??? So good.

Snack:  an extra brownie (I couldn’t resist… they are so, so good).

Monday:

B:  2 eggs over easy in coconut oil with avocado slices

L:  1 huge mug of bone broth & some leftover roasted brussels and sweet potatoes (and, if you must know, the very last brownie… so glad they are gone)

D:  2 veggie-packed meatballs (watch for the recipe this week… or you could try these) and a bunch of raw baby carrots.  (I was the only one home, so I was kinda lazy and didn’t bother making any sides.)

Tuesday:

B:  2 eggs over easy in coconut oil with avocado slices and sauerkraut

L:  3 veggie-packed meatballs, small apple & a handful of baby carrots (too bad the brownies are gone…)

D:  Our kids are still out of town with their grandparents, so we “treated” ourselves to Chipotle Grill (the “treat” part was not having to cook!).  I ate a burrito bowl with white rice, onions, peppers, barbacoa, salsa & guacamole.

Wednesday:

B:  the usual, 2 eggs over easy with avocado slices (no kraut because I finished it yesterday) and some fresh pineapple

L:  salad with mixed greens, hard boiled egg, avocado, roasted red peppers, black olives, cucumbers & balsamic vinagrette.

D:  ground beef hash (a one pot wonder including ground beef sauteed in kerrygold butter with a bunch of veggies and some seasonings)

Real food is not hard.

Thursday: 

B:  banana custard

L:  one egg over easy cooked in butter (you didn’t really think I’d go a day without eggs, did you?) on top of a small scoop of leftover hash with half an avocado and a mug of bone broth. 

D:  spice rubbed rib eye steaks, sauteed baby kale, sauteed green beans and a tiny birthday cupcake to celebrate my daughter’s birthday (too many sweets this week…)

 Friday:

B:  2 eggs over easy in butter with some avocado slices (really missing the added zing from sauerkraut)

L:  Leftover stir fry:  white rice (cooked in bone broth), last night’s steak and green beans, and broccoli slaw stir fried in butter.

D:  A hamburger topped with avocado, beans & baby carrots sauteed in coconut oil w/ dill, and a tossed salad with balsamic vinagrette.

Avocado makes everything better!

Saturday:

B:  the usual, 2 eggs over easy in coconut oil with some avocado slices and one banana pancake (these are what the rest of the family ate)

L:  leftovers from last night:  hamburger topped with avocado and beans & baby carrots

Snack:  organic apple & some organic strawberries (we took these with us on a hike)

D:  stuffed cube steak, roasted brussels sprouts and sauteed baby greens

    Thank you for letting us see how you eat. I have been wanting to ask you for awhile now for examples of what meals look like at your house. I am fairly new at the whole food thing. I have been diabetic (type 1) for 30 some years and am finding that the most difficult thing is re-training my mind that I do not need bread or a lot of carbs with every meal and to be able to see what healthy meal looks like is helpful.

      Thanks for letting me know that! If you stick with it, it will become second nature! I used to be the “whole grain queen”… so if I can do it, anyone can. Keep in touch! :)

    I LOVE coffee with heavy cream in the morning! It’s one of the reasons I get up, lol. Add a bit of raw honey and it’s a reason to wake up singing!! Now I’m off to try your yummy-sounding banana custard!

    • Truthfully, I love coffee any time of the day… but I’ve been limiting myself to the morning. I don’t think I have adrenal issues… but I don’t want to develop them either! How did the custard turn out?

        Oooh it turned out great! We all loved it, very yummy and total comfort food (plus, totally nourishing!). Thanks for the great recipe!

        I have to confess I love coffee any time of the day too, but I DO have adrenal issues, so I try to limit myself a bit. Usually I buy both decaf (water process) and regular beans, always organic, and then use a mix, so I figure, at least we’re only getting half the amount of caffeine. It’s the only way for me…I just cannot imagine life without coffee!!

  • Thanks for sharing. I love Chipotle! It’s the only place where I actually feel good physically after I’ve eaten there and it helps me get through road trips.

      We are not Drs so we can not give you health advice. But we can tell you what we think about the cholesterol issue. First of all, cholesterol is NOT all bad. And there is quite a bit of cholesterol in eggs but please read this is a quote from Sally Fallon of Nourishing Traditions: “Our blood vessels can become damaged through irritations by free radicals or viruses, or because they are structurally weak-this is when the body’s natural healing substance, cholesterol steps in to repair the damage. Cholesterol in cell membranes give our cells necessary stiffness and stability. When the diet contains an excess of polyunsaturated fatty acids these replace saturated fatty acids in the cell membrane, so the cell walls actually become flabby.

      Cholesterol is needed for proper function of serotonin receptors in the brain. Serotinin is the body’s natural ‘feel good’ chemical. Low cholesterol levels have been linked to aggressive and violent behavior, depression and suicidal tendencies.

      The cause of heart disease is not animal fats and cholesterol but rather a number of factors inherent in modern diets, including excessive consumption of vegetable oils and hydrogenated fats; excess consumption of refined carbohydrates in the form of sugar and white flour; mineral deficiencies, particularly low levels of protective magnesium and iodine; deficiencies of vitamins, particularly vitamin A, C and D needed for the integrity of the blood vessel walls and of antioxidants like selenium and vitamin E, which protect us from free radicals; and finally, the disappearance of antimicrobial fats from the food supply, namely, animal fats and tropical oils.”

      SO . . . cholesterol in the form that is in eggs is not harmful in itself. If you are eating rancid vegetable oils and refined carbohydrates and and not properly preparing grains you could be setting yourself up for health issues in the future. BUT IT IS NOT THE EGGS. Even mainstream medical professionals have had to back track on the egg/cholesterol blame game in recent years because there is no scientific evidence that it is related to elevated cholesterol in a manner that harms health.

      I know it’s a lot to take in, but the subject of cholesterol is a hefty one. I am in and out all day. Can give you a better answer later if I have time to sit down at the computer.:)
