This is NOT the recipe that I started off making. To be honest, I was trying to make a roasted red pepper and tomato soup. Half way through the recipe I realized it wasn’t turning our the way I wanted it to and I had to make some quick decisions to salvage my ingredients (and my dinner!). Maybe there is already an official name for this type of recipe, but I from now on I am calling this Jen’s Yummy Mess: 1) because it is not too pretty 2) I made the mistake and 3) duh, it’s YUMMY!

Yum! This looks good! I need to try this…we’re veering off gaps a little, with some carbs (a la Matt stone/180 degree health) with good results, so I love rice!
Oh, that’s good. Things better with Lucy then? Is she going off too? I will have to look into that 180 degree health. Not familiar with it.
