Summer is already a distant memory these days in New York. But I’m still not ready to let it go. Berries remind me of summer. So does ice cream. And since my freezer is stocked with frozen blackberries (due to my father being a berry picking maniac machine), we use them in our ice cream. Speaking of ice cream…
Have you ever read the ingredients list on a carton of ice cream? It’s absurd… what the heck is that stuff? (Hint: Breyer’s All Natural is totally not… don’t fall for marketing lies.) Want to be really grossed out? Ever seen the word “cellulose” in your ingredients? Read this.
Want to know what is in your ice cream? MAKE YOUR OWN!
This ice cream is SO good– and it is ready in less than 30 minutes. Less than 30 minutes– how amazing is that? Oh, you need more amazingness? I see how you are. How about only 4 ingredients? Yup… 4 ingredients that you can pronounce and pick out of a line up.
Use a blender to blend the following:
- 1 can of coconut milk
- 1 heaping cup of frozen blackberries (or berry of your choice)
- 1 Tbsp. vanilla extract
- 1/2 cup maple syrup
Pour into your ice cream maker and it’s ready to eat about 20-25 minutes later!
